Get Paul Prudhome's First Cookbook
One thing I would HIGHLY recommend, is get Paul Prudhome's first cook book:

He has GREAT jambalaya recipes....I've gotten great results from these, and in his first cookbook, he lists out all the seasoning blends in all dishes....this was before he got the idea to try to make money selling his blends.
One caveat....watch the cayenne amounts he used. I have a first edition and they may have revised it, but a couple of them blew my head off and I am a pretty decent Chile-Head.
But I cannot recommend this book enough to anyone wanting to do some good LA style Cajun foods.
To me, this IS the Cajun Cooking Bible.
