Get Paul Prudhome's First Cookbook

One thing I would HIGHLY recommend, is get Paul Prudhome's first cook book:

He has GREAT jambalaya recipes....I've gotten great results from these, and in his first cookbook, he lists out all the seasoning blends in all dishes....this was before he got the idea to try to make money selling his blends.

One caveat....watch the cayenne amounts he used. I have a first edition and they may have revised it, but a couple of them blew my head off and I am a pretty decent Chile-Head.

But I cannot recommend this book enough to anyone wanting to do some good LA style Cajun foods.

To me, this IS the Cajun Cooking Bible.

If you're not using the "Jambalaya Calculator" by Stadium Rat from TigerDroppings.com, you are making it waaay harder than you need to:

No Tony's - all mixed by hand. Calculated by pot size, servings etc. This is the gold standard.

When you go to your link, the information is not complete. There appears to be missing tabs. I have seen the link you are referencing years ago and it is very comprehensive and takes all of the guess work out of it. Can you check and see if you can find the entire link to share here with the Brethren?


Edit to add: I went searching for a link and found one that downloads and appears to be the complete calculator. Give this a try and see if it works.

The meatloaf recipe is worth the price of the book itsself.
