Well... not really...

Been wanting to do a smoked Prime Rib roast for the holidays, but other plans got in the way. I was strolling through Costco the other day, just browsing the meat department, when I stumbled across the Boneless Prime Rib roasts. I had to take a 2nd look at the price, but they were labeled at $4.39/lb. Upon further review, I saw that someone made a mistake and labeled the roasts as Chuck, hence the low price. I picked up 2 roasts (17lbs total), but should have bought them all. Needless to say, I sectioned it up and did a little 4.5lb roast for the family.

Smoked low at 225 - 240 to 120 IT, rested for 10 minutes, then seared. Made an Au Jus under the roast (not pictured), onions, carrots, garlic, celery, peppercorns and beef broth, then reduced with a little wine. Turned out great...
