The wife picked up a 4.5lb chuck roast at Krogers earlier in the week in the Mgr special area. I decided that it would make a good meal tonight. SPOG and Jeff's rub and into the pellet pro it went. ran @ 225 for four hrs until it hit 160 and then raised temp to 375, wrapped it in a pan with onion, crushed garlic, mushrooms, beef broth and 1/2 a beer. @ 198 deg internal I removed it from the pan and grilled it for 20 minutes to firm up the bark. I also grilled some sweet corn in the husk that I soaked for an hour. The drippings in the pan made a great dipping sauce and the beef was very tender and flavorful. The leftovers will make some great sammies.
