You can also make chile pasado. You roast, peel, seed and then tear in half and spread the halves open. You can then air dry these in a garage, etc or even dehydrate in the smoker. Like chile jerky. You can store in zips when dry and then just rehydrate with water to use in many ways.
 
Great looking tacos. I bought a couple dozen Hatch's yesterday and roasted them too. Use a little tonight, vacuum sucked the rest, one small pouch in fridge, the rest in the freezer for later.
