Not sure on how many chickens (approx 5 lbers) should I get to feed 55 people. They want it pulled, so there will be little waste. I have not been able to quite figure out chicken/person ratio yet.

I was thinking like 10. Is that a good estimate.

Any suggestions would be great.
 
At our restaurant we use 3# birds and yield just a little over 1+ per bird.

You are in the ballpark. I figure one pound of whole chicken per person.
Of course, depending on demographics [age, ladies vs men, etc.] it will vary, but that should be close. The bigger the bird, the more meat per pound of whole bird too.
