Been slacking on my posts lately been enjoying everyone else's posts in the meantime tho! Had a wine tasting event at work and Cherry rubbed smoked pork was on the menu. Did some exparamenting and this is what I came up with!!! The wings were a bonus snack for the crew
Used some Monin cherry syrup and rubbed down the trimmed butts. I like my pork with a touch of sweet so I figured it couldn't hurt
Crusted them with my sweet onion rub and threw them in the UDS. Let it ride wide open for about 6 hours and had to finish them in the oven. Didn't get any action shots but I used olive wood and mesquite lump for fuel.
After 2 hours in the oven...
Served it chopped my favorite way to serve smoked butts since I picked up that sweet Asian chopper!!!
BONUS WING TIME!!!
Had plenty of smoke left and some raw jumbo wings so I mixed some homemade mayo with some cider vinegar and worstashire then coated them in sweet onion rub. Smoked them till they were almost finished then threw them in the fryer!
Tossed them in a mix of Sriracha and Cholula. They were TASTY!!! Big hit with my crew!!! Thanks for Lookin
