Half grass fed beef, half ground lamb. Add an egg, whole chopped onion, cumin, parsley and Q-Salt to the meat and mix well, then flattened

A block of white cheddar and sharp yellow cheddar cut into slabs and placed strategically on the flattened meat mixture

Roll and wrapped in a bacon weave jacket and then seasoned with more Q-Salt

Into the smoker (Pint) running at ~260F

Based on the description and the pics this is definitely going to be good.
 
Good timing. I am planning on smoking a meatloaf tomorrow and since we have a lot of smoked Gouda in the house the wife thought maybe we could stuff some in the meatloaf.

Looks awesome! Nice pint to go along with the (Humphrey’s) pint. I also have the rule that a beer must be opened by the time the meat is ready for the grill/smoker.
 
What temp do you raise it to for the bacon weave? My family doesn’t like the flabby bacon that I end up with when I smoke anything in a weave. Even when I go hot and fast, the inner layer of the weave stays pretty rubbery. I’ve thought about searing it on the flip side of the grillgrates.

What is the thermometer you’re use that shows the temps on your phone. Is it a Fireboard?
