So with this Asian Throwdown going on, thought I'd throw my hat into the ring. Picked up a package of some sliced pork belly at the store the other day.

Mixed up a Char Siu marinade using basically this recipe. I added a bunch more garlic, fresh ginger, sesame oil and some oyster sauce that I found in other recipes.

Few hours in the fridge to marinate. Kept about 3/4 cup for the glaze later on and added a little more honey to it.

Indirect on the Big Joe for a while to render out some of that fat...

Then onto the hot side. Can't have Char Siu without any char...

It's a fine line between char & burnt, so be careful. Especially since the glaze & marinade has honey & brown sugar in it.

Thanks everyone. Wasn't quite sure how this would turn out. I made some Char Siu ribs a number of years ago using some commercial products that came out neon red, but flavorless. This had tons of flavor.
