Fired up the propane weber (sorry) with some red oak chunks underneath the grates which actually works surprisingly well for some skirt steak tacos with bell peppers and tillamook extra sharp white cheddar.

If they are skirt steak, you can also call them fajita tacos.. I believe. Either way they look awesome... I'm hungry now.:-D
 
Nothing wrong with firing up the gasser. I use mine a lot and also do what you did with the smoke wood.

The skits look great, bet they were tasty too. Nice work.

No need to apologize. Skirts are all about what they've been marinaded in. They don't spend enough time on the grill such that the type of fire would matter, imho.

They do look num-yummy!
