Time to eat..

Thanks to the Brethren for your advice... this shoulder/picnic was AWESOME! And it did not have a ham tinge to it..

One of these days I will get a real smoker, but in the mean time my Weber Gesesis with an aluminum tin on the flavorizer bars with hickory chips seems to do just fine.

The meat looks wonderful!

Next time, try to keep the cooking temps a bit higher (Pitmaster T mod), around 270. You'll power through the stall a bit faster and the end product will be better IMO.
 
Wow... that is making me hungry... AND I JUST GOT DONE EATING RIBS!!
