Here's what I'm thinking.......I dont' think they'll both fit on the drum and I don't want to cram them in there. I have recently had problems with the WSM and temp issues as well and coal getting choked out. Seems the fluids collect on the bottom of the WSM and the ash mixes with it and turns into a big old ash cake at the bottom and blocks the vents.
Anyway, I'm thinking bout borrowing my dad's Bandera clone and burning sticks. I got a chit load of pecan to burn. I'll be pulling an alnighter and a buddy of mine will be here helping me out.............by drinking beer. I will then pan em foil em and finish them in the GOSM gasser. I'll be using the GOSM as an outdoor oven. It's just too dang hot to run the oven in the house for 8+ hours. I'm dealing with a 22 and 23 Lb roll.
I figure these big old hunks of beef can take plenty of smoke.
What you all think?? Bubba's success with these has put me a little more at ease with doing them.
