Brisket sell by date?

I just picked up a brisket and the sell by date on the label is 8/20...

Does a month sound like an unusually long sell by date?

Also, I plan on cooking it next Monday, 7/28. Will it be safe just refrigerated or should I freeze and thaw it later this week?

a brisket in its cryovac can keep for a long time. some guys wet age them for a month. you'll be fine



So, if I let it sit in the fridge for a week can I legitimately claim I’m serving “Wet Aged” beef???[emoji1787][emoji1787][emoji1787]

Sell by date is set by store policy and is really useless. To be 100% sure you need to know the pack date. But, I typically wet age briskets for 45 days after the pack date, so waiting a week should be fine.

Take a look at the cryovac for air bubbles. As it ages it gives off some air. If the bubbles are the size of a quarter or smaller you are fine. At 45 days the bubbles are typically quarter-sized.
