Pulled some brisket out of the freezer from one I smoked 2 weeks ago. Wanted something different than sandwiches so I found a version of this online. It was called a cowboy casserole. I used crescent rolls as the crust instead of cornbread. Baked them flat for 10 minutes. Layered canned corn, chili beans, brisket, bbq sauce and baked for another 12 minutes then added Mexican cheese for 5 more minutes. Topped with green onions and fresh cherry tomatoes from the garden. Turned out pretty damn good and was easy to make on a Monday night.

Looks great. If I can ever bring myself to buy a $3.99 brisket again, I want to try making a pot pie with a frozen pie crust and a top crust.

Haven't had a frozen pot pie in a long time, but I remember the best part was the crust.

You have inspired me.
 
I've been coming up with creative uses for cherry tomatoes this year. Some really good.
