Before I start a new gig in a week, thought to see if this lil smoker could do a brisket flat right. Other cookers in the backyard are larger and I never wanted to fire up for a brisket, but this acquisition made it worth investigating.

Stay tuned! Waiting for it to get a little hotter and clean up that gray smoke a bit!

Cool... Can't wait to see the results...
Settled in real nice now. 8 lit briquettes onto about 5 lbs of Publix Kingsford knock-offs.... Cruising at around 270 with all vents open. May kick one down to 75% or so... This little cooker is just right for smaller use cases, like my family of three! [emoji6]

nice smoker. I use my pit barrels for duck and chicken. Just too easy to do and everyone thinks I actually put effort into it.
 
And it's off...198 at probe and 210 at thinnest point. Additional thermapen went in like buttah. Wrapped now and will slice in a bit.

Total cook time was around 5-5.5 hours. Obviously part of brisket was overcooked, other parts OK. Don't think I'll take a flat that hot again and will affix probes in ay least two spots to get a better idea of readiness.

Reckon y'all can tell which part was tender and which may have been a little overcooked...[emoji4]
