I beg to differ on the grade of the brisket meat. From lowest to highest, Select, Choice, Prime.



For my own part I will not invest in any brisket less than Choice. Especially for someone starting out. Heck. Why not spend the extra $$ for a chuck o beef that size?


I ruined about 15 selects on my WSM before I found out what the what.
