I picked the category, figured I should enter. Thick cut peppercorn bacon, bourbon maple syrup, brown sugar, Sucklebusters 1836 and some Korean Gochugaru chili powder.
Marinate in the bourbon maple syrup for a few hours, then add the other ingredients and onto the Big Joe at about 325 with a chunk of post oak.
Add some more bourbon/maple syrup near the end...
And we're done. Sweet with a bit of pepper kick from the 1836, then a few seconds later the Gochugaru announces itself.
