What are some good books on salting,curing meats? Ive heard that the book Char Cuterie is a good one?
 
I have that book, and trust me when I say it's the only one you will need. It is full of great info, from explaining the process all the way to advanced techniques.
 
That book is great. My coworker has it and I've read it and it's really good. I want to get it but I'm waiting for him to give it too me.....LOL

That's one of the few Ruhlman books I don't have, but intend to add soon! Although not dedicated to charcuterie, a number of his others, including Ratio, The Elements of Cooking, and most recently Rhulman's Twenty, are all great books, not so much cookbooks as technique books
 
Yup. The Charcuterie book and the Rytek Kutas book have been keeping me busy for a while. Love them both. Do yourself a favor and just get 'em. :thumb:
