Looks mighty fine adam. Cant beat beef backs for bark to meat ratio

How do you plan on making them less greasy next time? I just usually cook naked @285+ til tender.
 
Maybe a little more time/heat will render more fat. They can be a little rich.

So it sounds like you'll be trying them again? I like them and the price is right.

That's a good question. My Wife and I went to a high $$$ restaurant and I ordered the beef ribs. yuck! Greasy big time. I sent them back and got the chop. Should they be cooked slower? Faster?
