Hey all. I had a chuck roast that needed to be cooked up, and there is an "Enchilada Throwdown" going on, so I did this (You can check out the Throwdown thread here;http://www.bbq-brethren.com/forum/showthread.php?t=208531) :
Started by splitting the roast into two pieces, 1/2 for the enchiladas and the other 1/2 for ???????
On the Kettle;
Some homemade enchilada sauce;
meats coming along nicely;
Some grilled chicken for the taquitos;
The beef for the Enchiladas;
Put these in the oven and got the Taquitos cooking;
The enchiladas heated through, topped with goodies and back in the oven;
Some plated shots with spanish rice;
Yum, yum, yum! It all turned out really good. The cup in the center is Habanero-Cilantro Crema for the taquitos.
