My favorite cut of beef is bone-in ribeye roast. Twice a year, around Easter and Christmas, Publix supermarket runs sale on bone-in ribeye roast for usually around $6.99 /lb. I picked up several roasts during the Easter sale this year. I like Publix because they cut and separate the roast from the bones and tie the roast for me saving me some work.
1). Philly cheesesteak
I trimmed and sliced the roast thin using my cheap $99 electric slicer.
Used the electric griddle to make some cheesesteaks.
2). beef curry and rice
I saved the beef roast trimmings for breakfast beef and potato curry rice.
3). ribeye steak
I sliced the roast into 1.25 inch thick ribeye steaks and grilled it on Kamado Joe Jr. using Cowboy lump charcoal. Topped the ribeye steaks with sauteed onions, mushrooms, and side of oven roasted potatoes. Made for tasty breakfast steak.
4). beef back rib soup
I always save the roast rib bones to make beef soup. This is my comfort food and my favorite soup.
