I took some brisket I smoked the other day, chopped, and made bbq brisket hash. Basically julienned and fried up some potatoes, onions, some poblano pepper, tossed in the brisket, seasoned with salt and a sprinkle of rub, topped with cheese, an over easy egg, and drizzle just a little bit of tangy bbq sauce on at the end. It was so good, the wife ate as much as I did and we cleaned off a 14" skillet full between the two of us!

were's the bacon.

I know, I know. I didn't want to cover up too much of that beefy flavor though. It really didn't need it. Although, I am getting a pork belly sometime next week to make my own bacon. I think a repeat, plus bacon, might be in the plan. :mrgreen:
 
Sampler plate? Come on I want more than that. :hungry::hungry:
