Please accept this as my entry in the Shish Kabob TD

Been trying to eat better, so I was looking forward to cooking something healthy for this TD. I ended up getting out of work late this evening, so I was a bit rushed with this cook (we ended up eating at 9:30pm). As a result, it didn't go quite as planned, and I didn't get many pics of the prep work, but in the end it was all good.

Started with some squash, yellow & red peppers, and red onion. Marinated them in Italian dressing for 20-30 min, then dusted with SM Season-All.

Then grilled some pineapple kebobs (no pics)

Meanwhile, the shrimp were marinating in a paste made with evoo, cajun seasoning, and brown sugar. Then on to the grill:

The whole mess served on a bed of rice (use this for my entry shot):

It was tasty, and all for about 500 calories per serving!
 
Use Fire Wires for your Ka-Bobs, they work out better. Unless you just like sticks or rods. Has anyone ever Ka-Bobbed Fish.
 
I'm not sure I'm going to be able to give this one a roll Toast... Most of what I had in mind has been done, and Gore has the avante garde kebab angle all sewn up. :mrgreen: This is going to be one heck of a voting thread. :clap:

Yeah, it's getting tougher. Someone's already used what I thought was my "different" ingredient. Not doing octopus for sure, but maybe pomgranate.... nah, just kidding. I think for something different this time I'll put more effort into the photos -- as in using a tripod if I can find mine and taking pictures in manual instead of auto. I've been having a devil of a time focusing close-ups in auto. Better bring a bottle of wine to the photo shoots to ease the pain that is coming. Taking good close-ups was easy for me in film on my Fuji automatic --this digital camera is a whole nuther ball of string and it's full of knots!
 
I figured out what I was going to do -- but my partner was admitted into the hospital yesterday and will stay there this weekend for sure. Would have loved to enter your shishkebab TD, Toast, but will be back and forth into town and back home for a few days. I'll save my idea for the next kebab TD. Luckily have another week to cook for the sandwich TD.

You have bigger concerns Kathy. Hope all is well. Tell your partner that there are a lot of Brethren concerned. Let us know how she's doing when you can.

Thanks brothers and sisters for the prayers, healing thoughts and kind words, we appreciate them greatly. Carol is doing better. She struggles with edema and the aggressive course of diuretics dehyrated her to the point of bad kidney failure (creatinine over 400) including halucinations, tremors, jerking, numbness and falling asleep while she was talking. Coming along well, will be in for 2 or 3 more days. The really good news is the specialist said he is going to get to the bottom of why diuretics don't work on her the way they work on everybody else. Yahoo, we've been searching for someone to do that for more than a year. Fantastic outcome to a scary situation.
