Tatonka? I can find the ground meat here easily. Might be time to make some tatonka burgers. Tatonka is indian for buffalo at least that's what Dances with Wolves taught me.
 
Yep, Bison is the same as Buffalo. And we haven't seen anything but the ground stuff here either but we haven't hit Wild Oats or Fresh Market yet. We may be able to find some Buffalo steaks at one of those places. We'll see. I choses this category mainly because I have been asking Guerry to try it for years and he always says no that it's too lean. So, I have an excuse to make him let me try it now, HA!:clap2:
 
I had a buffalo tri-tip once - it was a little too lean for my taste. It will be interesting to see how this one goes...
 
WOW! Lucky you, maybe you could overnight some to Memphis:becky: I am hoping we can find something other than ground in a specialty market.
 
I will... the shipping would probably be outrageous!

I called The Fresh Market and Whole Foods here in Memphis today and both carry Bison cuts - not ground! Guerry and I are going Buffalo meat shopping after work tomorrow. I'm rather certain we're gonna suffer from price shock though - which means we better darn well cook it right!
 
I've seen ground buffalo meat at the local Hy-Vee here, but I don't usually buy meats there, and I have no idea what to expect from their buffalo. I'm heading to the butcher to see if they have buffalo (I've never asked before).

Well, Whole Foods here did not have buffalo, so I made a trip to Balducci's. The last time we went there we had to take out a second mortgage, but I was in a hurry this time and I figure that Redhot is paying since she made the call. :thumb: The cashier put it into two bags to make me feel I got my money's worth :crazy: :

Yeah, that's one pound of ground bison and a teensy weensy itsy bitsy 8 oz. buffalo steak they wanted $15.99 for. I don't think I've ever cooked a steak so small. I had to pick up sushi because if the kids found out I went to Balducci's and didn't pick up sushi, they'd kill me in my sleep. :shocked:
