CATEGORY DESCRIPTION - PLEASE READ:

For the next Throwdown, I propose we do Regional Bar-B-Que. Pick any region, and cook that style for us. What you cook is not limited to what's in the graphic above, and can include lesser known U.S. regional styles or favorites.

You may submit entries that are cooked from Friday 9/10 through Monday 9/27.


Entry pictures must be submitted by Noon Central US Time on Monday 9/27.

I still have a dog in the hunt, and it's no spoiler but I'm going with a Texas style. Although.... I'm watching the Wyoming game and I'm beginning to think their definition of the covering the spread has something to do with Cheese Whiz.

The bar opened early in the 1st quarter.

Please accept the pic below as our entry. We live in California so Tri tip it is. Grilled until internal temp was 125. Seasoned with SPG. Rested for 20 minutes before slicing.
