I decided to whip up some barbacoa since I've spent the vast majority of my years in Far West Texas, wedged between New Mexico and Old Mexico.

I started with about 3 and 1/2 pounds of beef cheeks seasoned with Hard Core Carnivore Black.
I put em a foil pan and tossed em in the drum smoker at 300ish.
After a few hours they temped at 205 and I drug them into the kitchen to make some tacos with some fresh tortillas.
I topped them with chopped onions & cilantro, Young Guns salsa, a little cheese and some lime.

Maybe not strictly traditional but really really good.
