1-grind it up to make sirloin burgers or steaks

2-remove the connective tissue and cut up-marinate 3 to 4 days and makes great beef tips to grill

3-throw the whole knuckle in the smoker to make chopped beef bbq
 
I think of it as a braising cut, it is part of the round, but, similar to sirloin in texture. Lean, and with some connective tissue, it still braises beautifully, which means it should smoke well too.
