Thanksgiving leftovers smoked turkey shepherds/pot pie

warm leftover mashed potatoes, spread 1/4" thick layer in greased glass pie plate bottom and sides
bake in 450 oven while you prepare filling (to a light golden brown)

in skillet saute in 1 TBS butter or margarine
1 carrot finely diced
1/2 onion (chopped)
1 rib celery diced
clove garlic diced

when onion is translucent and celery is tender, add
1/2 frozen peas
1 can cream of chicken soup
1 soup can milk
2 cups chopped smoked turkey
1/2 ts thyme
s & p to taste


when heated through, pour into baked potato crust, top with roll out pie shell
bake till top crust is golden brown
rest 3-4 minutes and serve

Yummy
they'll be back for seconds
 
Ooooh sounds great. My fav is the wife makes turkey noodle soup with the carcass and left over meat scraps, love smoked turkey! Gotta try the pie now, thanks!
 
I made a big ol pot of grits seasoned up nicely with Ol Bay, salt, black pepper, cayenne, essence, some parsley for a bit of color and some diced/chopped cajun smoked turkey. Added about WHOLE stick of REAL butter in the mix as well... Grits without REAL butter makes about as much sense as wipin your butt before you poop... Just ain't good nor smart. Grits are the cats meow down here.
