Is the reason I hate her too. 0400 awakened and decided to smoke a brisket point purchased a couple days ago. Walked outside, opened the lid and pushed the start button on the Austin XL Pellet. I looked up and admired the heavens. Long enough my neck said “quit that”. Rubbed the brisket with Albukirky Red Chile Seasoning. A matter of minutes, the brisket was placed in the cooker and lid closed. One handed while sipping Folgers.

The simplicity with consistent results.

The simplicity I dislike is why I like her.

One of those great stories.

You can always add a pellet or two to the hopper every 45 minutes if you like. It's just like tending a stick burner at that point!
