I just nuc the wings and ribs. I've never cooked the pork belly but today I just fried it like bacon.
All the PP was frozen. We reheat it in a crockpot. The ribs and brisket will all get eaten this week.
Generally the top rack is the hottest of the three. The bottom and second racks are very close in temp. The bottom rack has more radiant heat from the plate while the middle and top racks have more convection. The very top under the vent is the hottest. The bottom rack very close to the firebox has real good heat on the bottom side. All these are useful to cook different items.
Of course, if I open the CC to warmer damper and close the main vent, this all changes.
When I learn (master) more I'll post it.
