A guy at the hardware store this morning told me that he has a buddy that smokes hard boiled eggs. He boils them then takes the shell off and smokes for one hour and then sprinkles cajun seasoning on them. He couldn't stop talking about them.

Sorry if I missed this one if anyone has posted it before.

I know dustaway puts em inside fatties, and I just wrapped some in turkey burger and sausage last week.

Never tried them alone though.

if you are going to smoke them I would suggest doing a three minute boil on the eggs, so when you put them on the pit the yolk doesn't get rock hard and have the green egg syndrome. they are damn good

I think I'd rather wait til the egg turns into a chicken, then smoke it.

I tried smoking some peeled hard boiled eggs before and they came out rubbery and the smoke flavor didn't penitrate much of the egg whites, mostly smokey flavor on the surface only. The yoke was definately dry, maybe next time I'll try Dustaways suggestion and only do a 3 minute egg and try that.
