Just something different. This was from Memorial weekend.

I set up my fancy cooker.

Prepped the goods.

Tomatoes, tomatillos, peppers, onions, garlic and jalapenos..

a pork tenderloin...

also split some chistorra and longaniza sausages...pressed them flat for extra crunch when cooking.

Started the cook with beef fat and mushrooms...

removed them and browned the bacon and pork tenderloin...

removed them and added more fat and the prime ribyeye...

next came the chistorra, longaniza and a small sausage that the butcher insisted I try.. lol

I fried them fat side down to get a nice, crisp texture...

next, the onions and garlic...

when the onions and peppers were almost tender, in went the tomatoes, tomatillos and jalapeno..

seasoned heavily with coarse salt and cracked black pepper.

I let it go til heated through...

then added the pork tenderloin, bacon and the ribeye..and mushrooms

I let everybody get happy, then dipped the tortillas in the sauce and crisped them a bit on the griddle..

Holy cow (and pig)! That looks awesome!

Thanks Kevin! The sausages really added a nice flavor to everything. I forgot to mention, I put a couple of splits into the jalapeno to add more heat.
It was a nice evening for sipping on cold beer and snacking. :grin:
 
Amazing :clap2: as usual. I think I have that same comal. The first time I tried using it I found out my burner is way more powerful than I expected and it glowed for a bit :becky:

You really put a lot of work into that cook, just the chopping would have worn me out. But, as always, all of your hard work pays off at the end! Very nice and it does look like a relaxing evening.
 
Jeanie that looks great! I believe you could make a tutorial on how to cook butter toast, and make it look like a masterpiece!
