Thanks Sampson For the info. I have not done a lot of butts. Two others I did a while back were both 8 lbs one took 12.5 hrs and the other was 13.75 hrs but they did get to 195*. This one did not go above 190* but the probes as the brethern say went in like buttaa . It was moist and tender.:icon_bigsmil
