Cooks start out in trailer
Cooks hit big with their BBQ
Cooks sell trailer and move into brick & mortar
Cooks do well add trailer back for offsite gigs
Cooks don’t do well it’s back to trailer, or gone

Pork is most reviewed online not always positively (to dry-tough-no taste etc)
Pork belly sliced and or chunks getting popular
Beef Ribs are usually always thumbs up raved about
Free beer is a plus
I’ve not been anywhere with tortillas, pass on white bread
Sausage and sides are seldom disparaged
You can now get whole hog-at a sausage joint-in Texas
Turkey has been everywhere I’ve been it seems
Don’t underestimate the power of black pepper.
Lemon Pie-Banana pudding-brownies, I always pass (native pecan pie would get me)


The big one. Mesquite. It may not be the predominant wood-look closely at their woodpiles, you may find it.

I don’t eat out often, but I’m enjoying observing and eating out BBQ more often
