Ok this recipe for Spanish Rice is rather close to what The Bride cooks. I can eat it as the meal, she prefers it as a side, unless you add the chopped smoked pork or chopped brisket, or even a chunked fried pork chop to the mix. If it's even possible to make hardier, growing up Mom would add fried okra. It's a helluva a dish.
Bacon: fry a minimum of 8 pieces of bacon. Use the bacon grease as instrucibut chop the bacon and sprinkle on top at the end.
