I normally cook hot and fast, but the timing of this event made more sense to go low and slow. 6 butts seasoned with our rub and in the Humprhey's Whole Hog for 12 hours at 245. They came out really good.
As a side note, this cook was for a local children's hospital. Each month they look for area restaurants (or in our case caterers) to donate meals for the families staying at the hospital with their children. We signed up to donate the meals but to also serve them. We will definitely be doing this again.
