It really is fun to fire them off the first week of a new year.

I am a big fan of chicken fried steak, never used a Blackstone, what was your process on that?

Tenderized cutlets
In large deep dish mix (aluminum pan)
Flour, milk, egg. Make a wet batter just thinner than pancake batter. Let seasoned cutlets sit in batter a while in fridge.

Heat flattop and oil with bacon grease, butter or oil.
Place wet battered cutlets on flattop
Fry, but don't flip until they no longer stick.
