Cooked up these 2" chops this evening. Super moist and very tender. Seasoned with an italian seasoning. Very simple as I heated the Weber Performer up to 450. I then put on the whole loin on indirect heat and let the temp settle to 350. I pulled it off when the internal temperature hit 155 and let rest for 10 minutes. Slice it to desired thickness, brushed with veg. oil and seared over hot coals. Definitly my new go to for pork loin.
