Need some advice...what could I do with this 2# beef chuck roast in a pellet grill? It is about 1.5" thick.

And if there are better ways to cook it than on a pellet grill, please share. I have a few or these roasts (and some arm roasts that look similar), and I am procrastinating on how to utilize them.

I have done some searching on the forum and have some ideas, but I am concerned that these smallish roasts may not cook the same as a normal chuck roast.

One of my favorites with that cut is shredded beef for tacos, burritos or nachos... cooked low n slow on my pellet muncher! :)

Thanks for the input. For this go-around, I think I will give a try to the poor man's burnt ends. The shredded beef looks delicious also...but will require some additional research on how to accomplish.

Poor man's burnt ends turned out great! They lasted about 15 minutes after the 4-hour cook :-D Will definitely do this again.

They were excellent, and I will definitely do them again!!!

Tomorrow, I have to decide whether to thaw out another chuck roast or do some pork ribs instead...decisions, decisions :) :) :)
