Hrm the price I'm getting is $27.99. We have another Victorinox boning knife we've had since 2009, it's a bit different shape but gets the job done.

Hmmmm. I was able to change sellers to Amazon.

WTH, is Amazon changing the price depending on how gullable they think a particular individual is?

Here is a couple of alternatives to the Victorinox. I seem to remember the Victorinox being in the $15range about 6 months ago. Looks like they have taken a jump with everything else in price. If you want cheap knives, you can't beat the price of the Members Mark at Sam's Club.

Webstaurant has really cheap knife prices as well.

So I don't usually bone any meats, but I do need a good sharp knife for cutting meats. Will this knife work well or is there a better option out there?

I use a Victorinox 6" curved boning knife or 8" chef's knife for 95% of my knife work. The boning knife gets brisket duty for the finer grained tasks and the chef's knife for bigger cuts. About the only time I ever use the boning knife for "deboning" is on thicken thighs, but it's a handy knife for general use. I keep mine very sharp. I also have the straight blade 6" boning knife, but I almost never use it, as I prefer the curved blade.

Get this one (10" Cimeter knife) for cutting meats especially breaking down large cuts. Less than $10 most everywhere. The update brand is really good and I have some that are a few years old and work great.

I can't believe I forgot to list these knives. I have a few but need to buy more. Family owned business in in Danbury, CT, The Staib brothers, Mike and Scott. I've met both of them and they are great guys.

The reason that I like the knives is in the name. The handles are ergonomically design by a chef for a chef. The handles reduce fatigue of the hands that lead to carple tunnel syndrome.

This 5 piece set is a great price that averages out to $12.50 per knife. https://ergochef.com/product/prodigy-5pc-knife-set/

Buy them individually if you do not want the set and they are still a good price.

Thanks,

Robert
