A friend of mine made some KFC yesterday and used panko as the final layer. It came out looking great.
I'm thinking of trying the same method and slipping some prosciutto under the skin.
My first try at KFC last night, it went well, thanks to threads from Gore and Yobtav for the inspiration and technique. :clap:
Batter
Battered chicken legs
Set up kettle for indirect cooking
Maintain temps at 400F
Thin blue smoke provided by Jack Daniel's oak barrel chips
Finished...
Has 2 must try's on my list Kettle Fried Chicken (KFC) and Hassleback potatoes. Pretty much followed Smokey Al Golds method http://www.bbq-brethren.com/forum/showthread.php?t=101652. Used theighs instead of drumsticks. Same chicken fry and yardbird. Came out excellent.:thumb: Really tasted like...
