That's a fine rendition of Albondigas - I'll take two bowls, please!
 
I'll be making some- just a soon as the DFW temps get back to "semi-winter" temps. I plan on doing mine with the uncooked rice - that seems to be traditional. And if find the texture off putting, I will pivot to the bread crumbs. Yours looked great.
