BBQ Chicken Ode to the Garbage Plate

Cooked two 6lb birds in the Lonestar warming oven yesterday for pulled/chopped bbq chicken sandwiches. Today I had leftovers in the fridge and made the equivalent of a BBQ garbage plate...no fries, mac salad, or hot sauce like the upstate NY original...but stole some.concepts....

Bottom layer was this southwestern chopped salad thing that was one of those bag mixes. Had a good jalepeno ranch dressing on it.

Balked beans with diced peaches on one side. BBQ Chicken on the other. Drizzle of Blues Hog and yellow mustard across the top. Then crumbled some corn bread on top.

Good stuff...love the mix of the salad, beans, and chicken...could have kept adding toppings!
