Hello. I am new to the world of offset/stick smokers. I have two test smokes to my learning and have been mainly focusing on the fire management. This weekend coming up, I want to do 5 pork butts on my smoker (MeadowCreek TS120P). My question is, should I be putting water in the built in water bath? Entire cook, beginning only, or ??

Thanks. I have many questions, but will focus on one at a time.

I use water anyway even with my RF cooker. Maybe it's placebo effect but I do feel like my Que has come out a tad moister

Never needed it in my Pint. I use playground sand as a heat sink. Less mess and works perfectly!

Paul Shirley himself frowns upon water on top of baffle plate so my work around has been a stainless steel water pan on lower rack closest to firebox. It stabilizes the temps of my pit quite nicely

never needed water to even out temps or for the meat so I say heck no .

Never use water in any cooker. If you need to even out temps water will work.
