Plate of beef ribs hung on the PBC. Nothing more than salt and pepper.

Probe tender in 3 hours. Plenty of meat on these things. Here it is sliced. Picture doesn't really do it justice. Plenty moist and tender:

Probe tender in 3 hours - what temp were you cooking at?

It was 300 beginning to end with Kingsford Comp. Based on previous cooks, I was gonna wrap at that point, but when I probed it was like butter.
