In my mes at 100 and using corn cob pellets.

Going for 12 hours then in to the dehydrator.

Send some my way Adam!

At first when I read the title I was thinking this was a WWII beef! :p

Works great I do it every year with cayenne.
Best to ya on the smoke.

I cut them in half length-wise.
They are thick-walled & it speeds the drying process.
Looking good there!

Forgive my ignorance but are you making Chipotle?

I sliced em in half to smoke em, they were better I thought than the ones I didn't cut,

I do the same thing but I usually cut them in half before smoking. Takes up more real estate but it helps with the drying process. Japs take a long time in the dehydrator, but well worth the time.

I keep them whole, and set my UDS at about 150. I'll let it run for about 18 hours and then check.. They're usually just about done by then, but if not I'll just toss em in the oven at 200 and they finish in an hour or so.

@cheez, yea, for all practical purposes you could call them chipotles I guess. Just smoked dried jalapeños.

Nice!

That is something I never think about for saving chili's. I love chipotle powder and homemade would be great I think. Thanks!:thumb:

Might be a failed mission.

They don't seem to be drying.

Interesting. I'd have to take some, and make a Jalapeno sauce for soups stews enchilada sauce etc. bet the flavor is fantastic on your peps
