i got the air temp probe and testing it out is at 76 degrees. thermapen says 74 degrees, but its many years old. would you get thermapen recalibrated?
 
oh wow after a couple minutes they both say 76 now. maybe i shouldnt make anything out of this
 
Are you using the penetration probe or the air probe? The penetration probe is designed to be inserted into meat and may not read correctly in the air.
 
Did you buy a penetration probe also? You can put them both in the WSM and swap the cords at the monitor. I have a TW dual channel but keep a twist tie on the grate cord just to make sure which cord is which.

yeah it came stock with a penetration probe, i added the air temp probe. i like that idea but i also have a thermapen. will be useful when i cook different meats.
 
this is my first smoker wsm 14.5
just did some hot and fast chicken halves and they were damn good. better than costco rotisserie chicken that i always buy. there was a hot spot but i guess it must be the way the coals were arranged maybe.

now im just learning the smoker. im really liking this dot. im experimenting how to keep a constant temperature, kind of fun in a way. just roasting some peppers onions and garlic for some salsa.

i love my lodge hibachi but im gonna experiment grilling on the wsm. if it does a decent job ill probably sell the lodge.
 
We made a Stainless Steel mount as and option for the DOT on our Vaults an Reverse Flow Smoker to replace the standard 1/2 NPT thermometers. I talk to the guys at ThermoWorks about use the penetrating probe as and air probe and they told me that it would be no problem it just has a sharp point. So I tested it using my GURU and the penetrating was right on the money and the pit probe was off by 15 deg. I need to calibrate the DOT for the pit probe.

I got one too after reading really good reviews about them. Am going to try it out for the first time on my PBC and WSM this weekend.

I also got an air probe in addition to the penetration probe provided. Do you have to keep resetting the alarm every time you switch out the probe from one to the other or does it have some sort of memory built in?

I'm also debating whether I should get a Thermopop as a companion.

i havent tried switching probes. but i will tomorrow. i have realized that i should have gotten the chef alarm instead because the low alarm would be nice for controlling air temsp. oh well

all the circuitry is built into the base unit, the probe just sends a signal to it

so swapping or unplugging probes wont matter
