Well just surfing the net on meats for up coming comps. Well I ran across this with snake river " We do not recommend this cut for competition, however they will be a hit at your next backyard bbq."
 
To clarify, Snake River sells a pork collar cut. It includes part of the shoulder and part of the loin. It's not a legal cut for KCBS.
 
Says that on the ribs doesn't it? Too small maybe?

That disclaimer is on their Berkshire ribs.

"Although they more than make up for it in flavor and tenderness, these ribs are smaller than what most people are used to seeing in their local supermarkets due to the nature of the Berkshire breed. We do not recommend this cut for competition, however they will be a hit at your next backyard bbq."

It is great that they explain the size issue for comp meat.

I love Berkshire pork, but at $12/lb plus shipping, I will leave these for others. 8)
