After seeing the Pastrami cook that Lunchman did. I grabbed the 5 corned beef packages and began the process. Thanks Dom!

Here we go!

Thawed, trimmed, and rinsed several times. These were Blarney brand, and the seasoning was applied directly and not in a packet so I had to rinse / wash / trim that away.

Soaking in a food grade 5 gallon bucket

Add an ice bottle to assure it remains cold.

It is currently 34° outside so I will just add a lid and set it on the deck. Will change the water a couple time today but it is mostly a waiting game for now.

Update!

After several rinse and soak cycles yesterday, I dried and rubbed.
