Smoke chuck roast until it has the color you want. Then, put in a foil pan on top of peppers and onions. Pour a beer in the pan and cover tight with foil. Back in the smoke until the beef will pull apart. Shred the beef, take out any big pieces of fat and mix it all together. if there's too much liquid in the pan, put it back in the smoke uncovered until desired consistence. At least that's how I do it....and the stuff is GOOD....
