Started out by putting the turkey in a kosher salt and Old Bay brine for 24 hours

I've always like the Old Bay content in PatioDaddio's Thanksgiving Turkey brine...
 
Great looking turkey Marty. I would have never thought about using old bay. Just might have to try that one day
